There is an adapter to run the 8 speed but it is very expensive conversion as you need a harness and tcm

I don't think anybody has run an 8 speed problem-free in any restomod. Even the green Hellcat 71 Challenger that was done has issues going into limp mode at higher speeds.

From what I've seen, MMX has a stand alone for the 8 speed in the works.
Where are you seeing that info?
