im going to stick with the stock headers and just put on an offroad y pipe. who makes them and where can i get one. im looking for a 2.5" to 3" y pipe

should i go with 2" pipe and muffler? 2" y'd to 2" seems dumb to me it should be 2" y'd to 3" should i cut up the y pipe and make it a 2" to 3"? and use 3" pipe and muffler? can i run no cat with the mopar pcm?? or will it throw a code?

I would have a custom 2.5" y pipe made at your local exhaust shop, and have it increased to utilize a 3" collector. You can run no cat with any PCM, the code is only thrown when you put the rear o2 sensor in the exhaust. Just zip tie it to the frame, and weld the hole shut for that sensor. No light 99% of the time.
